When iron is exposed to moisture along with oxygen it undergoes a chemical change known as oxidation. As a result we get iron oxide on the surface which we in common terms know as rust. This process is slow but very stable. Hence in order to prevent rusting we apply oil on the surface of the iron to prevent it from getting in contact with moisture or oxygen.
